Here’s the recipe designed for a 24 cm diameter springform pan:

Cinnamon Rolls:

250g all-purpose flour
150g cold butter
20g sugar
1 egg
For Brushing and Sprinkling:

20g melted butter
1 tbsp cinnamon
3 tbsp sugar
Cheesecake Filling:

600g cream cheese
200g sour cream
Roughly 100g sugar
300ml whipped cream
1 sachet of vanilla sugar
Lemon paste or zest to taste
1 packet of instant gelatin
Plum Topping:

5 sliced plums
3 tbsp gelling sugar (2:1 ratio)
A pinch of vanilla
A pinch of cinnamon
3 tbsp water
Instructions:

Quickly knead the dough ingredients. Without chilling, roll out on a floured surface to the size of a baking sheet. Brush with butter, sprinkle with a mix of sugar and cinnamon, roll up lengthwise, and slice into thin rolls about 0.3-0.4 cm wide.

Grease the springform pan lightly. Arrange the rolls in the pan, creating a 4-5 cm high edge with the rolls. Use a small rolling pin to flatten the rolls slightly and fill in gaps. Place extra rolls on a baking sheet for decoration.

Cover the base with parchment paper and fill with dried legumes. Blind bake the base and decorative rolls at 175 degrees Celsius with convection for 20-30 minutes. Allow to cool thoroughly.

Mix all filling ingredients except the whipped cream. Gently fold in the cream afterward.

Fill the baked base with the cheesecake mixture and refrigerate for 3-4 hours or overnight.

For the topping, combine all ingredients, bring to a boil, and cook over medium heat for 5-8 minutes until the plums are soft. Allow to cool before spreading over the cheesecake.

Before serving, decorate the cake with the cooled plum topping to add a final touch of elegance and flavor.
