Ingredients:

8 oz (about 225g) rice noodles or any noodles of your choice
1 tablespoon vegetable oil
2 cloves garlic, minced
1 tablespoon grated ginger
2-3 tablespoons red curry paste (adjust to taste)
1 can (14 oz or 400ml) coconut milk
1 tablespoon soy sauce
1 tablespoon brown sugar or palm sugar
1 bell pepper, sliced
1 carrot, julienned
1 cup broccoli florets
1 cup sliced mushrooms
Optional protein: cooked chicken, tofu, shrimp, or any protein of your choice
Fresh cilantro leaves and lime wedges for serving
Instructions:

Cook the noodles according to the package instructions until they are al dente. Drain and set aside.

In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger, and sautΓ© for about 1 minute until fragrant.

Add the red curry paste to the skillet and cook for another 1-2 minutes, stirring constantly to toast the curry paste.
