If you ask me, these are the perfect appetizers for when guests come over. They are quick to make, and universally loved, so you really can’t go wrong with them.

I’ve shared my guacamole recipe before, but this time I eyeballed it and included:

β€’ 3 avocados β€’ 10-15 cherry tomatoes β€’ a small red onion β€’ juice of one lime β€’ salt and pepper to taste β€’ 1/4 tsp of garlic powder

Additionally, you’ll need 12 small tortillas, which will suffice for the amount of guacamole sauce.

For brushing the tortillas:

β€’ 2 tablespoons of olive oil β€’ 1/4 tsp of salt β€’ 1/4 tsp of garlic powder β€’ 1/4 tsp of smoked paprika

Mix the above ingredients, cut the tortillas in half, and brush each piece with the mixture. Roll them up and secure with a toothpick.

❗️ Make the diameter of the roll-up slightly larger than you want the final product because they will flatten a bit during baking, allowing room to fill them nicely.

Bake the rolled tortillas for about 15-20 minutes in a preheated oven at 200 degrees Celsius, until they turn a golden brown color. Cool the tortillas before filling them with guacamole sauce on both sides (it’s easiest to use a piping bag for filling).
