Bajadera is a traditional celebratory cake that is considered essential by many hosts during festivities. This layered dessert is highly esteemed, and the version Iโ€™m about to describe is said to be particularly delightful.

For the dark layer, youโ€™ll need:

  • 100 ml of milk
  • 120 grams of sugar
  • 70 grams of butter
  • 180 grams of roasted nuts
  • 180 grams of ground biscuits
  • 50 grams of dark chocolate

For the light layer, the ingredients are almost the same:

  • 100 ml of milk
  • 120 grams of sugar
  • 70 grams of butter
  • 180 grams of roasted nuts
  • 180 grams of ground biscuits
  • 50 grams of white chocolate

And for the glaze:

  • 150 grams of dark chocolate
  • 60 grams of butter

Preparation:

  1. Begin with the light layer by heating milk, sugar, and butter in a saucepan until everything is melted and mixed well. Then, add the ground roasted nuts and biscuits, stirring to combine before mixing in the white chocolate.
  2. For the dark layer, repeat the same process, using dark chocolate instead of white.
  3. Pour the dark mixture into a mold and refrigerate it until it sets. Then, add the light mixture on top and refrigerate again.
  4. While the layers are setting, prepare the glaze by melting the dark chocolate and butter together, then pour it over the light layer.
  5. Allow the cake to set in the refrigerator for a few hours before serving.
