Ingredients:
Wet Ingredients:
- 2 large eggs
- 1/2 cup butter, melted
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/3 cup yogurt
- 1 tsp vanilla extract
Dry Ingredients:
- 1 1/2 cups oat flour
- 2 tsp baking powder
- 1 tsp sea salt
- 1/4 cup milk
For the Blueberries:
- 1/2 cup blueberries
- 1 tbsp sugar
Optional:
- Powdered sugar for topping
Instructions:
- Blueberry Preparation:
- In a bowl, mix the blueberries with sugar to coat them evenly. Set aside for them to macerate a bit.
- Muffin Batter:
- Preheat your oven to 350Β°F. Line or grease a muffin tin to prepare it for baking.
- In a mixing bowl, use a hand mixer to combine the melted butter, granulated sugar, light brown sugar, eggs, yogurt, and vanilla extract. Beat until the mixture is creamy and smooth.
- Gradually fold in the dry ingredients: oat flour, baking powder, and sea salt. Mix until just combined. Add milk and blend until the batter achieves a uniform texture.
- Gently stir in the sugared blueberries.
- Baking:
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean and the tops are golden brown.
- Cool & Serve:
- Once baked, remove from the oven and allow the muffins to cool in the tin for a few minutes. Then transfer to a wire rack to cool completely.
- For an extra touch of sweetness, dust the muffins with powdered sugar before serving.

Hello, may I ask if I can use dried blueberry or canned? Here in our country especially here in the province, fresh blueberries are hard to find and expensive, mostly are dried or in can.
Thank you π
