Chocolate Ganache Fudge Brownie Loaf

Ingredients:

For the Brownie Loaf:

• 1 cup dark chocolate chips
• 1 tbsp coconut oil
• 2 cups oat flour
• ½ cup cacao powder
• ¼ teaspoon baking soda
• 1 teaspoon sea salt
• 3 eggs
• 1 cup coconut sugar
• ½ cup olive oil
• ¾ cup water

For the Chocolate Ganache:

• 1 cup dark chocolate chips
• 4 tbsp heavy whipping cream (vegan variant can be used)

Instructions:

1. Brownie Loaf Preparation:
   • Preheat your oven to 325°F and lightly grease a loaf pan.
   • In a microwave-safe container, combine chocolate chips and coconut oil. Heat for two 30-second durations, ensuring you stir after each interval. Once melted, put it aside.
   • In a large bowl, whisk together oat flour, cacao powder, baking soda, and sea salt.
   • In another bowl, beat the eggs and coconut sugar with an electric mixer until they attain a light and fluffy texture, roughly about 3 minutes.
   • To this, incorporate olive oil, water, and the previously melted chocolate. Mix on a low setting till all ingredients blend seamlessly.
   • Gradually fold the wet mix into the dry mix until a consistent batter forms.
   • Pour this batter into the prepared loaf pan and bake for about 65-70 minutes. Allow it to cool down completely before moving on to the icing.
2. Ganache Preparation:
   • In another microwave-safe bowl, mix chocolate chips and heavy whipping cream. Like before, microwave in two 30-second segments, stirring after each. After heating, whisk thoroughly until the mixture turns smooth.
   • Drizzle the ganache over the fully cooled brownie loaf.
   • Refrigerate for approximately 20 minutes to let the ganache set. After that, slice the loaf, serve, and relish every bite!
