Coconut Balls

Coconut balls, also known as coconut truffles or coconut macaroons, are delightful treats made primarily from shredded coconut and sweetened condensed milk. Here’s a simple recipe to make coconut balls:

Ingredients:

2 cups shredded coconut (unsweetened or sweetened, depending on preference)
1/2 cup sweetened condensed milk
1/2 teaspoon vanilla extract (optional)
1/4 teaspoon salt (optional)
Chocolate chips or melted chocolate (optional, for coating)
Instructions:

In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt (if using). Mix well until all ingredients are thoroughly combined. The mixture should be sticky and hold together when pressed.

Once the mixture is well combined, scoop out small portions of the mixture and roll them into balls between the palms of your hands. The size of the balls is up to your preference, but typically they are about 1 inch in diameter.

If you want to coat your coconut balls with chocolate, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Alternatively, you can melt the chocolate using a double boiler.

Once the chocolate is melted and smooth, dip each coconut ball into the chocolate using a fork or dipping tool, allowing any excess chocolate to drip off. Place the chocolate-coated coconut balls on a parchment-lined baking sheet.

If you’re not coating the coconut balls with chocolate, you can simply place them directly onto a parchment-lined baking sheet.

Place the baking sheet with the coconut balls in the refrigerator for about 15-20 minutes, or until the chocolate has set (if using).

Once set, your coconut balls are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to a week.

These coconut balls are perfect for snacking, dessert trays, or homemade gifts. Enjoy their sweet, coconutty goodness!
