Lemon Loaf with Lemon Icing
Ingredients:
For the Lemon Loaf:
- 160g sugar
- 160g softened butter
- 1 tbsp lemon zest
- 50ml lemon juice
- 250g flour
- 1 pinch of salt
- 1/2 tsp baking powder
- 2 eggs
For the Lemon Icing:
- 90g icing sugar
- Lemon zest (to taste)
- 2 tbsp lemon juice
Directions:
- Prepare the Batter:
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
- Add the lemon zest and lemon juice, mixing until combined.
- In a separate bowl, whisk together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Baking:
- Preheat your oven to 180ยฐC (350ยฐF) and grease a loaf pan or line it with parchment paper.
- Pour the batter into the prepared pan and smooth the top.
- Bake in the preheated oven for about 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.
- Prepare the Lemon Icing:
- In a small bowl, whisk together the icing sugar, lemon zest, and lemon juice until smooth. If the icing is too thick, you can add a little more lemon juice or water to reach the desired consistency.
- Finishing Touches:
- Once the lemon loaf is completely cooled, drizzle the lemon icing over the top. Allow the icing to set for a few minutes.
