Ingredients for Lemon Cake:
- 160g of sugar
- 160g softened butter
- 1 tablespoon of lemon zest
- 50ml of lemon juice
- 250g of flour
- A pinch of salt
- 1/2 teaspoon of baking powder
- 2 eggs
Ingredients for Lemon Icing:
- 90g of icing sugar
- Additional lemon zest for garnish
- 2 tablespoons of lemon juice
Instructions:
- Preheat the oven to 180°C (350°F). Grease and flour a loaf pan or a round cake tin.
- In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Add the tablespoon of lemon zest to the creamed sugar and butter, and mix well.
- Beat the eggs into the mixture one at a time, ensuring each is well incorporated before adding the next.
- Stir in the lemon juice.
- In a separate bowl, sift together the flour, a pinch of salt, and the baking powder.
- Gradually fold the dry ingredients into the wet mixture until just combined; be careful not to overmix.
- Pour the cake batter into the prepared pan, smoothing the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
While the cake is cooling, prepare the Lemon Icing:
- In a small bowl, whisk together the icing sugar, additional lemon zest, and lemon juice until smooth. Adjust the consistency with a little extra lemon juice if needed; the icing should be pourable but not too runny.
- Once the cake is cool, drizzle the icing over the top, allowing it to drip down the sides.
- Garnish with extra lemon zest if desired.
- Let the icing set before cutting the cake into slices to serve.
