Lemon Loaf with Lemon Icing

Ingredients:

For the Lemon Loaf:

  • 160g sugar
  • 160g softened butter
  • 1 tbsp lemon zest
  • 50ml lemon juice
  • 250g flour
  • 1 pinch of salt
  • 1/2 tsp baking powder
  • 2 eggs

For the Lemon Icing:

  • 90g icing sugar
  • Lemon zest (to taste)
  • 2 tbsp lemon juice

Directions:

  1. Prepare the Batter:
    • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
    • Add the lemon zest and lemon juice, mixing until combined.
    • In a separate bowl, whisk together the flour, salt, and baking powder.
    • Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  2. Baking:
    • Preheat your oven to 180ยฐC (350ยฐF) and grease a loaf pan or line it with parchment paper.
    • Pour the batter into the prepared pan and smooth the top.
    • Bake in the preheated oven for about 45-55 minutes, or until a toothpick inserted into the center comes out clean.
    • Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.
  3. Prepare the Lemon Icing:
    • In a small bowl, whisk together the icing sugar, lemon zest, and lemon juice until smooth. If the icing is too thick, you can add a little more lemon juice or water to reach the desired consistency.
  4. Finishing Touches:
    • Once the lemon loaf is completely cooled, drizzle the lemon icing over the top. Allow the icing to set for a few minutes.
